'Tis the season for Wild-Caught Alaskan Fish
Perhaps due to the pandemic, I am particularly aware of when wild-caught "fresh" fish has become available in my area.
In Champaign, IL we do have a few stores that carry wild-caught "fresh" fish. I look forward to wild-caught Alaskan king salmon. This summer, I decided to give wild-caught Alaskan halibut a try. In the past, I haven't enjoyed halibut as I probably overcooked it and/or it wasn't fresh. This time I used "fresh" wild-caught Alaskan halibut and a recipe provided by wholesomeyum.com. I didn't use all the ingredients listed nor did I read the extensive narrative. My main interest was in how to prepare the fish without drying it out. I used garlic powder, paprika, black pepper, a tad of butter, lemon juice as the marinade (which I applied shortly after preparing it) and a bit of avocado oil in the pan. I followed the recipe's searing directions and then tested it with a "meat" thermometer to ensure it was cooked just a bit over 145 degrees F (to be the "safe side), then sat down and gave it a try. Delicious!
In the upcoming weeks as possible, I plan to purchase more "wild-caught" fish from waters I trust and then freeze some of it for use after the season. I am one store's wait list for Alaskan wild-caught king salmon (as it is very difficult to find here) but the halibut has been available for some time. We'll how it goes. If you enjoy eating fish, I hope you have access to wild-caught varieties that you find tasty.

Faye.....I love all kinds of fish and wild caught Alaskan halibut is one of my favorites... A golf buddy of Ralph's and Bruce's in Florida hosted a dinner party (for several consecutive seasons a while back) that featured Alaskan halibut. During the summer, Joe would fish in Alaska and freeze the fish and have it shipped to Florida. Then he would host a party....and fry the fish. It was delicious! Now however, I prefer my fish prepared in a similar manner to what you did. What a great sounding preparation. Enjoy! (I am hoping my Google Account is fixed so I can continue to comment)

However, tonight I baked some halibut and it also tasted good. Anyway, I do hope your Google Account is fixed. I love hearing from you.
