Deviled eggs sans egg yolk & mayonaisse
Some time ago I came across a recipe for deviled eggs where hummus was substituted for both mayonnaise & egg yolk. I think one could mix the hummus with the yolk. However, I usually make a batch stuffed with hummus and another "classical" batch with mayonnaise, egg yolk, and paprika. Here's a photo of a plate with both types displayed:
The perfect snack! I love the idea of hummus mixed with egg yolk as a substitute for the classic deviled egg.
ReplyDeleteLovely, Antonia. So glad to hear from you on the blog. Sometimes I spread the hummus on the egg (white) without the yolk and use the extra yolk on the "classic" version or set it aside. I also neglected to mention that I sometimes add mustard to the "classic" version which gives it extra texture and flavor. I don't eat a lot of egg yolks but Joyce likes both versions so we're covered.
