A short second-spur of the moment- post for today

A second post for today as I wonder if any of you sometimes wonder what to have for a light (lightish) dinner or meal?  I was faced with that question tonight so opened a can of sardines.  Well, I don't really like sardines so I smothered them with some guacamole dip and a bit of mustard.
The crackers are there to help the sardine-guacamole combo go down.  Just a handful or so of crackers to keep it relatively low carb.  The greens/veggies are self-explanatory except I did include asparagus.

  3. Faye...once again, this plate is so attractive. I am now more motivated to try the sardines....a nutrient rich food.....I haven't tried them in years....looking forward to your next blog. I am trying to locate the previous blog (skirt steak). I spent more time reflecting on memories of your mom and failed to post on her birthday.

  4. That’s so funny—you don’t really like sardines but (I gather) you’ll eat them for the nutrition and cause they’re quick. Coincidentally, I have several cans of sardines in the pantry. I rushed out and bought them after the osteopenia diagnosis—even though as you know I avoid animal products. But the calcium!! Still haven’t opened one can. I saw serving suggestions in the NYT and I have those pinned up on the fridge. One is to eat them with soy sauce, rice vinegar, chili flakes, rice, & cucumber. I might be able to do that. If a can is ever opened.

    1. Good strategy-in my opinion-to, shall we say, enhance their flavor. Yes, they are super nutritious and a very good source of calcium. Btw, most of my diet has evolved because of nutrition and ease of preparation rather than just because I like the food. Over time, I've learned to appreciate "healthy" foods. Haha.

  5. I adore sardines, straight up outta the can no nothing, except maybe a drizzle of soy sauce, eaten with rice and a bowl of red miso soup.
    Sardines and mackerel, being plentiful and cheap, are a staple of Japanese cooking. Being an oily fish, naturally sardines have a strong flavor. If your oily fish is anything more than 24 hours “fresh,” you might try pouring very hot, almost boiling water over it before cooking. Even better (this will work for canned sardines, too), simmer it in a little sake with a “thumb” of ginger cut into fine needles added in. Serve with a dollop of freshly grated daikon (aids digestion), drizzled with a little soy sauce. Garnish with a sliver of citrus peel if you want to be fancy about it.

  6. I like sardines right out of the can (drained). I keep boxes of matzoh at home, which are a good carb accompaniment for simple meals.
